Oven-Roasted Fall Fruit and Vegetables
- 1 lb. Brussels sprouts, trimmed and halved
- One-half onion, chopped
- l apple or pear cored and sliced
- 2 teaspoons extra-virgin olive oil
- Pinch of salt
- Freshly ground black pepper
- Juice of one lime
Preheat oven to 425°. In a bowl, toss the apple, onion and Brussels sprouts together, and coat with olive oil.
Spread the mixture on a baking pan with sides. Stir several times while baking to roast evenly. Roast for about 15 minutes, or until Brussels sprouts are tender and slightly browned.
Sprinkle with lime juice to serve.
